Gordon Ramsay’s Hell’s Kitchen

Inspired by the global hit reality TV show starring the famously foul-mouthed chef, this poolside venue aspires to make guests feel like they’re on the studio set. As in the show, Red and Blue teams slog it out for primacy, most notably at the three-course Battle of the Menus every Thursday and Friday.

There are also Saturday brunches with free-flowing drinks, or Gordon’s Sunday Roasts – traditional affairs with beef, chicken, lamb or a veggie beetroot Wellington. But it’s the chef’s signature beef Wellington that is the real standout of the menu here – served medium rare with a layer of mushroom duxelles, accompanied by potato purée, glazed root veg and a red-wine demi-glâcé.

Demon Duck by Alvin Leung

The hotel’s new signature Chinese restaurant is overseen by another famous – even notorious – TV chef, who brings an innovative twist to much-loved Asian classics as part of his duck speciality menu. Playful, theatrical and even a bit eccentric, this speakeasy-styled venue also serves Hong Kong inspired cocktails.

Most in demand are Chop Chop Suey, a colourful ‘prosperity salad' like those served in Singapore during Lunar New Year, and slow-roasted Peking duck cooked creatively to make the best of both skin and meat, served with calamansi buns, pancakes, cucumber, green onion and hoisin sauce.

TakaHisa

An outpost of the revered Japanese fine-dining experience, TakaHisa restaurant brings both top-notch, authentic sushi and some of the world’s best wagyu beef to the table.

Standout is the special omakase course by the restaurant’s master chefs, combining superlative seafood from Toyosu Market and top-grade A5 Kobe beef.

Venus Ristorante

Named after the Roman Goddess of love and beauty, this is another new spot – this one within the hotel’s indulgent Venus Beach Club with its Italian cocktails and granitas.

The restaurant serves Mediterranean appetisers, pizzas from a wood-fired oven, homemade pasta and perfectly grilled meats and seafood; don’t-miss dishes are fresh seabass with aubergine, tomatoes and Amalfitana sauce, and Delizia al Limone, a light lemon sponge with Chantilly and almond crumble.

Bacchanal

This decadent restaurant was inspired by the highly acclaimed one of the same name at Caesar’s Palace Las Vegas.

It's terrace is home to a French brasserie serving Gallic classics such as mussels and frites, prawns marinières with crozets (a flat Savoie pasta) and millefeuille pastries. Early family suppers are served, and there’s also a Saturday Familyfest Brunch.

Havana Social Club

An homage to 1920s Cuba, this vibrant venue serves up tapas and rum cocktail against a background of lively evenings, ranging from Monday-Friday happy hours to Latino ladies’ evenings with salsa classes and reggae nights.
